Ristorante Panorama features the Guinness World Records: ''largest wine preservation and dispensing system in the world.'' This system allows us to maintain the vitality of 120 open bottles of wine for an extended period of time. By pressurizing each bottle with inert nitrogen gas, the system (also known by many as a ''cruvinet'' or ''winekeeper'') enables us to present a wide range of fine wines in optimum condition.

The wine list at Panorama changes every week! Our goal is to offer a dynamic mix of familiar, unusual, great, rare, comfortable and just plain good wines-representing a wide selection of regions, styles, prices and grape varieties. Each year over 800 different wines appear on our system, with over 150 selections by the glass daily including dessert & sparkling. We know of no other program that presents such a wide range of choice, by the glass.

There are four principal ways to enjoy wines at Panorama: You may order a ''Panoramic Flight'' - a personal tasting of 1.5 ounces of each of five different wines in a select group. These flights allow you to taste and compare wines in relation to one another, or to sample a very expensive wine, on which you may be reluctant to splurge by the glass or bottle. Following the Panoramic Flights, you will find this week's full selection of wines. These wines are listed by color, region of origin and grape variety. You may select a 3-oz ''Taste'' or a 5-oz ''Glass.'' All of our wines are essentially priced by the ounce-we would like to encourage you to make the most of the opportunities offered by this system-by tasting a flight or drinking a glass of whatever you like, at a reasonable price. All of our wines are available by the bottle, as well. Each 750ml bottle of wine is equivalent to approximately five 5-ounce glasses of wine.

We serve wines by the glass or bottle in the finest available ''over-sized'' stemware, manufactured in Germany by Riedel. Both the 3-oz ''taste" and the 5-oz ''glass'' are served in a 12½oz Riedel Degustazione wine glass-fine all-purpose stemware for both red and white varietals. We serve premium red wines at the ''reserve'' level in a 19¾oz Riedel Degustazione glass or in a 23¾ oz Riedel Pinot/Nebbiolo glass. By offering extra-large premium glassware, we hope to enhance your wine enjoyment and enable you to fully experience the aromatic and visual qualities of each wine.

We serve our white wines at approximately 40-42 degrees Fahrenheit, our reds at approximately 60-62 degrees. In European and U.S. ''wine country'' tradition, we leave the open bottle right on the table, red or white. Marble wine chillers or ice buckets are available on request.
