This month we feature a most complex, extracted and memorable articulation of the Pinot Grigio grape. Far from the ordinary juicyfruit quaffer most commonly bottled as white Pinot Grigio with only a hint of the rosy tint of the naturally pigmented grapes, Scarbolo maximizes the stunningly deep copper color of the grape by 4 days extended maceration on the grape skins, then attains unusual intensity of flavor by aging the wine on its lees for 18 months in stainless steel and large oak tonneaux. They call this limited & luxurious bottling of a mere 2,500 cases "Ramato"--the Italian term for copper, to reference the striking pigmentation resulting from their careful efforts.
In the Glass: a Rosé with serious stone-fruits: apricot, peach, nectarine and a bit of woodsy, smoked pressed watermelon, all tied in a bow with mouth-watering tannic acid structure that could stand up to game fowl, light meat dishes and bloomy cheeses
